Only used a few recipes but they were good. I have trouble finding new things to make and this helps.
Nice pictures great book.
This is a pretty, colorful book, and many of the recipes included here are tasty. But this is not what I was looking for - if you are buying this book to manage type 2 diabetes, you should know that it includes quite a few carb-heavy recipes, with dishes that have 30-40g of carbs per serving (say, asparagus fontina toast at 39g carb, curry chicken wrap at 39g, or steak florentine at 38g, to mention just a few). To be fair, there are some recipes that add up to less than 20g per serving, but unfortunately too few, and pretty basic. If you are trying to manage your type 2 diabetes with oral meds and diet (or maybe even diet alone), and have conservative glucose targets in mind (say, under 100 fasting, and under 140 postprandial at 1h, going down back to the baseline at 2-3 h, with HbA1c kept under 6), food described in this book, with its heavy carb load (p. 15 mentions "somewhere between 45 and 60 grams" per meal), is not going to help you reach or maintain such targets. Instead, you may want to opt for something that will support your goals better, like The Ketogenic Cookbook: Nutritious Low-Carb, High-Fat Paleo Meals to Heal Your Body.
My dad has diabetes so it is very important to me to find good, nutritious recipes to cook for the family that are guaranteed to work for his diet as well. These do. Love that Cooking Light has taken all the guesswork out.
This book has some good recipes. Also plenty of pictures, I like that in my cook books.
I would not purchase a cookbook that uses GMO foods such as canola and soybean oil, and most corn products. Also artificial sweeteners, such as aspartame and splenda, are harmful to our health. Some of the recipes look very good.
